Pan-Fried Omelette Sandwich

This is a great one pan breakfast sandwich, basically formed by folding an omelette between two slices of bread. The trick is to place the bread in the cooking omelette, flip then fold in the outer edges to form the sandwich.

You can pre-cook some streaky bacon (in the same pan if you prefer) to give this perfect breakfast sandwich a tasty "bacon and eggs" combination that is the ideal start to the day.

What you will need for the perfect Pan-Fried Omelette Sandwich

My preference for any pan-fried sandwich is always for thick sliced bread. White sliced, or a 50/50 white/wholemeal combination always works well, but for this sandwich I have chosen a thick sliced white bloomer for that rustic taste and texture.

A good quality bacon is a must to elevate the omelette in to a tasty treat. I prefer streaky bacon, cooked until crispy. This gives great texture and substance to an otherwise "soft" sandwich.

And for the eggs I choose 2 large (or you could use 3 small / medium) but this purely depend on the size of bread and the pan.

Seasoning requires some salt and plenty of freshly ground blackpepper to taste.

To pan-fry anything well I start with a dry pan over a medium heat. If you feel you need a little oil, then a fine spray of 1 Cal cooking oil may help but do not use too much as there are plenty of oils within the bacon anyway. Also, a good quality diamond coated non-stick pan will never require any additional oils for cooking.

Cook 3 large slices of streaky bacon over a medium heat until starting to crisp. Be careful as they will continue to cook and crisp up even after taking off the heat.

To start your sandwich, take 2 slices of the thick white bloomer and butter well on one side.

Now take 2 large eggs and crack into a bowl and beat well, adding salt and pepper seasoning to your own taste.

beat 2 eggs in a bowl

Add a little butter to your frying pan over a medium heat, and pour in the beaten egg mixture as you would when making a straightforward omelette. At the same time, as your omelette is cooking, gently place the 2 slices of bread (butter side up) into the mix, slightly apart, as shown. If, as in my case, the shape of the loaf is a little irregular, then they should form a mirror image of each other, so that when folded, they make a uniform sandwich.

When the omelette is cooked through (and there is no runny liquid on the surface) the omelette needs to be flipped over. Normally I would just flip in the air, but with the bread slices embedded into it, this is too difficult to attempt. So, simply place a large plate, face down over the pan, turn upside down, and slide back into the pan so that buttered surface of the bread begins to fry.

Now, working quickly, fold in the curved, overhanging parts of the omelette so that there is only the outline of the bread in contact with the pan. Now add the precooked bacon to one side and then fold over the other to complete the sandwich.

Now simply pan fry your sandwich to your taste, turning regulaly and adding a little butter as necessary to achieve a beautiful, crisp, golden finish.

If you prefer to add another layer of flavour to your sandwich, why not try a slice of cheddar cheese on top of your bacon, before closing your sandwich and continuing to pan fry.

How does your sandwich maker compare?

For most of the recipes shared here I use my trusty Tower Deep Fill 3-in-1 Sandwich Maker, so obviously you may need to adjust your ingredients slightly if you are using a different appliance. Having said that, most sandwich makers are very similar in design and size, and the amount of each filling is a guide only and you can increase or decrease, add or subtract, according to your personal taste.

Never be afraid to experiment, and remember you won't always get the perfect result first time, so if at first you don't succeed try, try and try again. It's great fun!
